Thai-ish Chicken Burgers



Yet another variation on chicken burgers, this time with vaguely thai flavors - garlic, chili, coriander and ginger. It's served with a not-so-thai salsa, and stuffed into decidedly un-thai pita breads. So this is pretty much a cross-over dish, I suppose. Not that it matters. It tastes great, and that's what's really important. And with a food processor, it's a cinch to make.

Do excuse the horrible photo. I was lazy, and hungry, and I know it looks awful. Trust me, it's much better than it looks.

Thai-ish Chicken Burgers
serves 3-4

500 g boneless chicken thighs
1 red chili
2 garlic cloves
big bunch fresh coriander
fresh ginger, thumb-sized
salt
1 egg
3 tbsp cream
3 tbsp breadcrumbs

Use a food processor. First, mince the chicken - it won't take long, and don't over process it, but run the machine until the chicken is nicely minced. Remove to a bowl.

Cut the chili, garlic an ginger into smaller pieces, and place in  your food processor and add the coriander. (No need to wash it after the chicken, it'll all be mixed soon anyway.) Mix until everything is finely minced.

Add the flavorings to the chicken, and season with salt. Add in the egg, cream and breadcrumbs, and mix well. Let the mixture sit for about half an hour, in the fridge.

When ready to cook, shape small patties and fry in butter or oil, on medium heat.

Serve with a simple salsa:
2 avocados
200 g tomatoes
1/2 red bellpepper
1/2 red onion
2 limes, juiced
salt, pepper

Cut the avocados and the tomatoes into large chunks. Finely chop the bellpepper and the onion. Stir everything together.

Stuff everything into a pita bread. Enjoy!
